It simply resets the orientation of the 3D model in the Setup page in Betaflight.

When you plug in the USB cable to your flight controller, your drone could be facing any direction, but your computer won’t know that so the 3D model in Betaflight Configurator could be facing a different direction to your quad.
If you put the quad facing forward now, then press the “Reset Z Axis” button in Betaflight, it will reset the 3D model and have it facing forward as well.
